I look forward to your version of Thai curry.  I love that you have the same affection for spices that I do - and that you know how to combine them to such good effect. I think you would like the way I cook, too. I have tons of recipes - I just like looking at and trying yours, because every new recipe is a new adventure. I read cookbooks the way some people read novels...&lt;br /&gt;I have had good luck with making Vietnamese spring rolls lately - nice when it's hot and you don't want to cook much. This looks wonderful! The only thing I need now is your recipe for eggplant spaghetti, because I think I may heart eggplant even more than zucchini, if that's possible... This recipe is definitely a keeper, and now I don't feel bad about making a ton of "chicken" patties that The Wiz won't eat. If they freeze well, it can be my "go-to" meal when I'm making a completely different dinner for him.
