P.A.Bees- MMMMMM Jalapeno? Could that be the prize for the Virtual Scavenger Hunt, per chance? You are correct, I do love a lot of green veggies, however, I also love yellow squash, and orange carrots, and purple eggplant...I think that a plate should definitely have about as many colors as I utilize on my canvas, lest it be dull and boring and less satisfying to the senses. This is something I am continually working on Wifester with...

You take going GREEN to an all new level. You ate only green for a while thus saving the planet from ozone depletion as it grazed less gassing cows, the veggies you like are green, you were sick 'green' from eating bad petitte chous and I am envious green of the freshness in your pic! If I knew how to add a pic to this comment I would show you the jalapenos growing on my back porch - they may be hot but they will not make you sick. Come see them on my blog!

Chatty, OOOOH! Spring rolls are ever so yummy! I will be emailing you for that recipe for sure. I'm like you with cook books, I can read through them like a novel. Usually, I find 5 or 6 different recipes for the same dish, then combine them all and come up with my own concoction, that's just my inner control freak taking over, I suppose

I ADORE Thai food - the spices are killer - and all types of curry, too. I look forward to your version of Thai curry. I love that you have the same affection for spices that I do - and that you know how to combine them to such good effect. I think you would like the way I cook, too. I have tons of recipes - I just like looking at and trying yours, because every new recipe is a new adventure. I read cookbooks the way some people read novels...
I have had good luck with making Vietnamese spring rolls lately - nice when it's hot and you don't want to cook much. If you don't have a good recipe, and would like to try them, email me.

PS
OK - can't resist the "insert your own joke here" with reference to zucchini...you're too young to remember, but I'm guessing that if you were to go to you-tube and type in "Tim Curry" and "The Zucchini Song" that laughter would result.
I'm just sayin'...I really really REALLY heart Tim Curry!
UPDATE - just went away and did a search - couldn't find it at you tube, but did find it here. The video is bad quality, but stick with it - as a favor to me ; ) - and the quality improves mid-song.
Sheesh, girl - the things Tim and I go through to give you and Wifester a laugh... ;-)
http://tinyurl.com/5bjdw2

Oh, I heart zucchini, too! This looks wonderful! The only thing I need now is your recipe for eggplant spaghetti, because I think I may heart eggplant even more than zucchini, if that's possible... This recipe is definitely a keeper, and now I don't feel bad about making a ton of "chicken" patties that The Wiz won't eat. If they freeze well, it can be my "go-to" meal when I'm making a completely different dinner for him. Thanks!

Thanks Chatty! I will keep you posted with more recipes! I love vegetarian cooking, and I love using spices. I once dated a chef (prior to meeting Wifester) and learned a lot about cooking from her...I think I have a darned good pallet, if I do say so myself! Wait till you try my thai curry veggies! I'll post that one soon!

OK. This one sounds like a keeper, too. More vegetarian recipes, please! I trust your taste buds - because it's apparent that you know how to SEASON things properly (unlike many of the vegetarian cookbooks I bought and was disappointed by! Can you say "bland" and "boring"?) Recipes kitchen-tested by someone I trust is a definite plus!
